The crawfish last week were some of the best quality we have had this whole season. Good size, no molting and really lively.
We received our calls from the farmers this morning and all of the suppliers went up on their prices by .50 a lb.
Mostly because they do this every year because they know there is a demand for crawfish for Easter so they stick it to us. I am not a happy person this week due to them doing this but we also have to take into consideration that this cold weather snap that we are experiencing this week will cause a problem with the catch. The weather at the Crawfish farms this week starting today on Monday was 43 degrees this morning.
Tuesday will be in the 30′s. This doesn’t help much because it usually means the crawfish will molt due to the change in water temperatures. Something we can’t do anything about.
As I have tried to explain to so many of my customers, is that when the weather is cold at the farms, the crawfish do not come up to feed. If they do not come up to feed, they can’t catch what we need.
Being that’s it’s Good Friday this week and Easter, the demand is so overwhelming that trying to catch enough crawfish to feed every person who loves crawfish this weekend will be a tough one. Especially when you have to consider how many people in Louisiana depend on Crawfish as their main staple this coming weekend.

The crawfish suppliers and the crawfish farms did not drop their prices this week so I did.
The prices for crawfish this week is: 4.00 lb.
Full sacks only and the crawfish will not be 100% graded but will be washed and will have a mix of sizes in the sacks.
The sacks will range from 28-36 lb.
Please call your order in and reserve it for the day you want to pick them up.
Our crawfish suppliers deliver to us from Tuesday thru Sunday.

Crawfish this week were effected by the change of weather at the farms again. We were hoping for an issue free weekend but all the suppliers that caught crawfish and delivered crawfish all had the same problem. The Farms experienced a full day of rain and fog which can cause the crawfish to go into a molt. Molting is when the crawfish loose their shell so they can eat and become a larger size. During the time they molt, they can be caught but they have a soft shell. During the time they are caught and driven to the Dallas area, the crawfish can be crushed due to them being a soft shell. We have no control of this.
We just want everyone to be aware of this. And we do suggest that if you find a crushed crawfish, discard it and cook all the remainder of crawfish.
You will know after the crawfish is cooked and you pull the head off if the crawfish is edible. If there is no meat you toss the crawfish. If there is meat, eat it.

Fresh Halibut available from Alaska on a daily basis.
Season starts on March 15th and usually ends around November 15th.
During the off season, we purchase enough wild Alaskan halibut to get us through the season until it comes available again.
The fillets are absolutely perfect and you wouldn’t know it wasn’t just caught.
Prices are high this past season and they look like they might remain high.
We’ve had to go up on price this past season to 21.49 per lb.
we have Fresh Halibut in stock on a daily basis.
Our Halibut is with skin on and also bone out.
We can cut the portion you need while you wait and we can also skin the Halibut if you like.
This week the price on Crawfish has dropped another .25 per pound.
Crawfish: 4.25 per pound (full sacks only GRADED AND WASHED CRAWFISH)
Graded and washed crawfish are the only quality that we like to bring in for our customers.
We will start cooking crawfish on Saturdays once the price drops enough to make it affordable to our customers.
