Crawfish this week were effected by the change of weather at the farms again. We were hoping for an issue free weekend but all the suppliers that caught crawfish and delivered crawfish all had the same problem. The Farms experienced a full day of rain and fog which can cause the crawfish to go into a molt. Molting is when the crawfish loose their shell so they can eat and become a larger size. During the time they molt, they can be caught but they have a soft shell. During the time they are caught and driven to the Dallas area, the crawfish can be crushed due to them being a soft shell. We have no control of this.
We just want everyone to be aware of this. And we do suggest that if you find a crushed crawfish, discard it and cook all the remainder of crawfish.
You will know after the crawfish is cooked and you pull the head off if the crawfish is edible. If there is no meat you toss the crawfish. If there is meat, eat it.

Fresh Halibut available from Alaska on a daily basis.
Season starts on March 15th and usually ends around November 15th.
During the off season, we purchase enough wild Alaskan halibut to get us through the season until it comes available again.
The fillets are absolutely perfect and you wouldn’t know it wasn’t just caught.
Prices are high this past season and they look like they might remain high.
We’ve had to go up on price this past season to 21.49 per lb.
we have Fresh Halibut in stock on a daily basis.
Our Halibut is with skin on and also bone out.
We can cut the portion you need while you wait and we can also skin the Halibut if you like.
This week the price on Crawfish has dropped another .25 per pound.
Crawfish: 4.25 per pound (full sacks only GRADED AND WASHED CRAWFISH)
Graded and washed crawfish are the only quality that we like to bring in for our customers.
We will start cooking crawfish on Saturdays once the price drops enough to make it affordable to our customers.

Hey everyone, The Copper River Sockeye Salmon Season should begin the 2nd week of May. I will keep everyone posted as the season gets closer.
CRAWFISH UPDATE: 3-20-14
Well, I can finally report to everyone that the Crawfish season is finally actually happening. With Mardi Gras recently and with all the cold weather we’ve had, we have been patiently waiting for the suppliers to let us know that we can start letting everyone know that Crawfish are available. The weather this week in southern Louisiana will be the warmest they have had all season. This will bring the crawfish up to feed, it’ll also cause them to molt(which means lose their shell so they can gorge on food so they can get larger).
We want everyone to understand that the weather can really change things on the crawfish farms so to be able to tell everyone that we can get your crawfish we want you to know that there are occasions that the catch can be down due to water temps or even rainy weather.
We ask that you call our store and reserve your crawfish. We can receive crawfish Six days a week and there are times that are suppliers will deliver on Mondays. We ask that everyone please reserve your order as soon as you know that you are going to want them. We will record your order in our weekly order book and place your order the day before you pick it up. It’s very important that you call in to reserve your order. When the season is really going strong we bring in extra crawfish for the weekends for those who don’t reserve their order.
Reserving your order will confirm that you will being getting your crawfish.
