Get ready to bundle up this week. It looks like the cold weather is here for a while.
While the temperatures are dropping, I do my best to try and locate and bring in fresh fish that is popular for inside cooking along with the seafood that we bring in for the outside grill.
So, when it’s cooler, keep up with the new items that we’re bringing in. Flounder is one that I will always try to keep in stock as long as the price doesn’t get out of hand and we can keep the prices low as possible for everyone to enjoy. Flounder can go along ways when it’s purchased and cooked. It doesn’t take much to make a great meal. Some fillets run a little larger but I can show you how to make it work with the same recipe.
One real popular way to cook Flounder is to take a couple small fillets and soften a 3 oz. crab cake and spread the crab cake mixture over one fillet, season it and lay the other fillet on top and season it and melt some butter and drizzle it over the fillets and bake it at 375 degrees for approx. twenty minutes and then switch to broil for 3-5 minutes until the flounder is golden in color. It’s ready! Enjoy!

We’re getting a lot of Lobster orders for Thanksgiving and a lot of oyster orders.
Please remember that oysters are higher in price this year compared to last year. They are starting to come down some but not enough to make a difference. All I seem to do is pound this statement into these suppliers ears.
We should be able to get the oysters we need but reserved orders sure help us determine how much to secure.
We’ll have the oysters in 4# Gallons and also by the pound.
And also, in the shell by the dozen and by the case.
Another very popular dish for Thanksgiving is “Whole Salmon and Whole Snapper”

If anyone is not familiar with all the items we stock, we would love to have you drop by and check it out first hand. We have a large wall display showing all the items we stock on a daily basis. We also add to the board as we bring in new items. So, if there is something you are having a hard time finding, please let us know, I will be more than happy to locate your product and we can add it to our inventory.
If it’s an unfamiliar product or our suppliers tell us that there is no request for it, this will be something we have no control of. But I will do everything I can to bring it in for you.

If you are looking for snacks or hors d’ oeuvre’s for the games this weekend, we always have freshly cooked 16/20 count Peeled and deveined cocktail shrimp(slightly seasoned). We also have Cajun Crab Dip(w/real crab meat) which everyone thoroughly enjoys and we also have Seafood Gumbo, Crawfish Etoufee, and Shrimp Creole that many of our customers love. These come in 30 oz tubs or 4 lb trays. And if you really want a treat, you have to try out my special Hot Smoked Alaskan Sockeye.

With the Halibut season coming to an end around November 15th, I recently secured enough Halibut after the season closes so we have enough Halibut to keep us stocked for two to three months. Prices have gone sky high on Halibut over the past couple of months and the current cost in Dallas from all the suppliers is more than what I sell it to my customers. This is why I do the things I do to keep the cost down as much as I can because the suppliers do not look at it this way.
I know many customers price check when you start seeing seafood prices climbing. As most of my customers know, I will bend over backwards to secure special items such as Sockeye, King Salmon, Halibut and Sea bass as long as I can purchase these items at a cost to keep my cost down for my customers.
My goal is to keep the cost down and to continue searching and acquiring the highest quality that I can for my customers.
We are always looking for great recipes to share with our customers so if you can send us your special recipe, I’ll be happy to post it for all of our customers to enjoy.
