Hi everyone!

This newsletter is a repeat of last week’s newsletter for those who didn’t get a chance to read it. I hope everyone is having a wonderful summer.

Grill out and be with family and friends!!

We have everything you need to entertain your party from the Best assortment of Wild caught fish for the grill to Live blue crabs and shrimp for a great boil. Have some fun and let us help you put together what you need for a wonderful gathering.

Here is a good example of what you could combine to have a great Seafood Boil:

Try combining Snow Crab Clusters, shrimp, corn, potatoes, mushrooms. You could add calamari rings, mussels, artichokes and whole garlic along with any of our sausages (crawfish, Alligator, Andouille, Louisiana Hot sausage) I know you will enjoy it, so when you are ready to plan something like this, let us know.

Making Seafood Kabobs is what we love doing for our customers. Here is our program on us making your Seafood Kabobs: First, you tell us which fish and shellfish you would like on your Kabob. Whatever the combination is, you only pay for the cost of what we make your kabobs with. You can come in to tell us what you want on your Kabobs or you can call your request in and we can have it ready for you to pick up.

Example: your kabob could include 2 monster shrimp, 2 scallops, grouper and tuna.( you only pay for the cost of the weight of each item).There are so may different combinations to make. But we want you to get creative. Give us a call or come down and let us make it for you.

Example: Combination of:  monster shrimp, Halibut, Grouper and Sea bass or maybe try using Salmon, Halibut, Scallops and Mahi

VERY IMPORTANT: WE HAVE A VARITY OF MARINADES THAT CAN BE USED.  IF YOU HAVE YOUR TASTE BUDS ACTIVATING WHILE READING THIS, LET US KNOW WHAT YOU ARE THINKING.

I hope you all are enjoying the summer so far. It’s a hot one! There’s not a lot happening this time of summer other than hot temperatures and trying to stay cool and vacation time. We are seeing quite a few of you coming through the store and the business has been really steady even with so many people on vacation. We have everything you need for grilling out and we also have been bringing in a lot of Live Blue Crab for our customers on the weekends. The variety of fish we have for the grill should make it easy to make a decision when it comes to grilling out. This week is Shark Week and we have been selling a lot of shark. Along with shark being really great on the grill, we have so many other great grilling fish. Not only fish, try heating King Crab legs on the grill or even doing seafood kabobs, no matter what, it’s a lot of fun. Many of our customers are starting to learn that placing whole oysters in the shell on the grill are easy and delicious and are fun to do. How easy can you get? We always have oysters in stock whether they are in the shell or already shucked for you. So, drop by soon and get a dozen oysters to take home with you.

If you are planning a seafood dinner soon, we always have a very good variety of fresh and frozen seafood. We get our deliveries on a daily basis except on Sunday. If we run low on any specific items on Saturday, we are able to get a hot shot delivery before the end of the day so we have what you need for Sunday.  We always have a good selection on what’s good for the grill and also what’s good to cook inside the house.

Once again, our big seller over the last few weeks has been our “Wahoo”. What a really delicious fish!!!  Other really big sellers have been our Cobia, Mahi, Grouper, Halibut and Sea Bass. Even though our Copper River Sockeye is always our biggest seller.

WHOLE FISH HAS BEEN A VERY POPULAR ITEM ON THE WEEKENDS. SO IF YOU HAVE NEVER TRIED A WHOLE FISH ON THE GRILL, THIS IS THE TIME TO TRY IT. YOU’LL BE HAPPY YOU DID.

Another big seller is our Red Snapper. It’s probably the most familiar fish that everyone knows of. We stock more  Red Snapper than any of our fish. It’s our overall top seller.

When it comes to fresh vs frozen, I try to explain to my customers that I personally do all the buying for Capt’n Dave’s and I search out to find the highest quality seafood available for our customers and also at the best price that I can find. You have to ask yourself sometimes, how fresh is the fish that I am about to buy and go home and cook. I analyze and question every supplier when I order. A lot of my suppliers don’t really Iike it when I ask so many questions but they all seem to understand that I want the prettiest, highest quality, and the best price I can get for my customers. I also want to know when the fish was caught and how long it’s been out of the water and to make sure that they don’t thaw any frozen product and offer it to me as fresh. Whatever comes in frozen, I want to be able to thaw it out myself or I want to keep it frozen until it is sold. That way, I have control of knowing what quality it is before it goes home with a customer.

On a daily basis, we receive multiple shipments from out suppliers. When there is a special fish that’s hard to find, I will purchase plenty so when it’s not available fresh, I have it for you frozen. Our fresh fish arrives daily and we vacuum seal all fresh fish that arrives at my store. At the end of each day we look at how much fresh vacuumed sealed fish we have and we’ll freeze some to make sure we always have a backup when the special fish is not available. The rest of it is sold fresh and we only keep enough out fresh for only a couple days. We get our deliveries daily so there is no need to keep large inventories. We’ve been doing this for approximately 27 years and I believe most everyone is enjoying it.

One interesting thing about what is available fresh and what is available frozen is that our suppliers know that I am very particular when it comes to quality and I require the highest quality seafood available. Over the past few years with the price of fuel climbing, it has caused many fisherman to stay out longer while hauling in their large catch. The large ships have all the processing equipment on board and they do all the processing while at sea. Many species that are caught, filleted, vacuumed sealed and frozen and when they return to shore to drop off their catch, they turn right around and go back out again. Some large fishing ships have boats that meet them out on the ocean and transfer their catch so they don’t have to come into shore as often and this actually keeps cost down when fuel is so high.

When it comes to WHOLE FISH, we can get you Red Snapper, Red Fish, Striped Bass and Salmon and even Branzino. There’s not a whole lot of things better on the grill than a whole fish. If you haven’t tried it before, it’s easy and really simple and delicious.  We can tell you how to prepare and cook it. Just let us know if you need any help on cooking a whole fish. I need one day advance notice to bring in your whole fish. All whole fish are scaled and gutted.
