Father’s Day weekend turned out to be a very busy weekend. I hope everyone enjoyed being with their family and I hope all the Dad’s out there had a great weekend.

Now we have The 4th of July right around the corner to look forward to and everyone can get back together for a big bash.

This year the 4th will fall on a Tuesday. So that means a very long weekend for many us.

I wanted to let everyone know that we will be closed on the 4th. But we will be open until 6:00 P.M on the 3rd of July. So plan, plan, plan and I will make sure I have everything for everyone as long as it’s available. All suppliers are closed on the 4th so plan on picking up everything you need on Monday. Scroll down the page a little and you can view the list of seafood that we keep in stock and have it available daily.

When it comes to WHOLE FISH, we can get you Red Snapper, Red Fish, Striped Bass and Salmon andeven Branzino.There’s not a whole lot of things better on the grill than a whole fish. If you haven’t tried it before, it’s easy and really simple and delicious.  We can tell you how to prepare and cook it. Just let us know if you need any help on cooking a whole fish.

WE WERE TOLD TODAY THAT THE FARMS ARE EXPERIENCING THE EARLY STAGES OF THE NEWLY DEVELOPING TROPICAL STORM WHICH IS SUPPOSE TO EFFECT ALL OF LOUISIANA AND TEXAS THIS WEEK. WE DON’T HAVE ANY IDEA AS OF TODAY IF OUR SUPPLIERS ARE GOING TO HAVE ANY CRAWFISH FOR ANYONE THIS COMING WEEKEND. THE SAME GOES FOR LIVE BLUE CRAB. What a great weekend we had this past weekend and I want to thank everyone that came by, I really do appreciate everyone!! Based on the amount of customers that came in over the weekend I feel pretty certain that many Mom’s didn’t have to lift a finger on their special day. The store was really crowded all weekend and we listened to many customers talking about their plans for their special cookout for their Mother’s on Saturday and Sunday. I hope everything turned out great for everyone.
Knowing how busy it was going to be for Mother’s Day weekend, I made every effort to make sure we had plenty of seafood for the grill especially knowing that the weather was going to be really nice. Some of our most popular items for the grill were Wahoo, Mahi, Grouper, Salmon, Tuna and Halibut. We went through many cases of King Crab legs, Snow Crab Clusters and tons of Live Crawfish. Our Cajun Crab Dip was as popular as ever and flew out the store like always.

WE ARE EXPECTING OUR FIRST SHIPMENT HOPEFULLY ON FRIDAY OR SATURDAY OF THIS WEEK.
I WILL INFORM EVERYONE IN ADVANCE EXACTLY WHEN  OUR FIRST SHIPMENT ARRIVES AT THE AIRPORT ON ALASKA AIRLINES CARGO AND APPROXIMATELY WHEN I WILL BE ARRIVING AT THE STORE WITH THE GOODS.
 
COPPER RIVER SOCKEYE: PRICE: $$$$$ WE DON’T HAVE A PRICE UNTIL THE FISHERMAN MAKE IT THROUGH THE OPENING DAY. THIS IS A 12 HOUR OPENING FOR COMMERCIAL FISHING.  WHEN THE FISHERMAN LET ME KNOW HOW MUCH THEY CATCH, THEY WILL SET THE PRICE FOR THAT CATCH. THAT IS WHEN I WILL SEND OUT ANOTHER BLAST EMAIL TO KEEP YOU INFORMED. THIS WILL ALSO BE WHEN I INFORM EVERYONE EXACTLY WHEN TO EXPECT THE ARRIVAL OF THE FIRST SHIPMENT TO OUR STORE.  
THIS IS THE FIRST OPENING OF THE SEASON THAT OUR GOVERNMENT ALLOWS COMMERCIAL FISHING IN ALASKA AND THE COPPER RIVER IS THE FIRST LOCATION EVERY YEAR THAT OPENS FIRST.
THIS IS WHEN THE SOCKEYE AND KING SALMON  RETURN TO THE RIVERS AFTER BEING IN THE OCEAN FOR  THREE OR FOUR YEARS.
THESE FISH HAVE A GOAL AND REACHING THAT GOAL CAN BE MORE DIFFICULT THAN ANYONE KNOWS.
SOCKEYE AND KING SALMON HAVE ABOUT 600 MILES OF TRAVELING TO DO BEFORE THEY REACH THEIR DESTINATION WHERE THEY SPAWN AND LAY THEIR EGGS. THEY ARE FIGHTING EVERYTHING THAT GETS IN THEIR WAY INCLUDING COMMERCIAL FISHING, BEARS AND OTHER NATURAL THREATS THAT THEY COME ACROSS. THEY LIVE IN THE OCEAN UNTIL MATURITY AND THEY BUILD UP THEIR FAT SO THEY HAVE THE STRENGTH TO MAKE IT TO THEIR FINAL DESTINATION. 
THE FAT THAT THEY BUILDUP BEFORE STARTING THEIR JOURNEY IS THE FAT THAT WE ALL ARE LOOKING FORWARD TO AND THAT IS THE OMEGA-3 FATTY ACIDS. THE FISH IS CAUGHT WHILE ENTERING THE MOUTH OF THE RIVER FROM THE OCEAN AND AFTER THEY GET PASS A CERTAIN AREA, THE FISH WORK THEIR WAY UP THE RIVER AND BY THE TIME THEY REACH THEIR DESTINATION, THEY BURN OFF THE FAT USED TO REACH THIS POINT AND THE FLESH OF THE SALMON IS DARK RED WHEN THEY BEGIN BUT ALMOST WHITE WHEN THEY REACH THEIR DESTINATION. AT THIS POINT, THE BEARS AND HUMANS HAVE NO NEED FOR THIS FISH EXCEPT THAT THE BEARS DO EAT THE SKIN BECAUSE THE SKIN IS THE ONLY THING LEFT THAT HAS ANY FAT IN IT AND THE BEARS EAT AS MUCH AS POSSIBLE SO THEY CAN HYBERNATE. 
SO, I HOPE THIS EDUCATES YOU A LITTLE AND BY THE WAY, THERE ARE SOME PEOPLE WHO DON’T UNDERSTAND WHY WE CAN’T HAVE FRESH WILD SALMON ALL YEAR LONG. THE REASON FOR THIS IS THAT IF WE WERE TO HAVE UNLIMITED FISHING FOR SOCKEYE AND ANY WILD SALMON, WE WOULD NOT HAVE ANY FOR OUR FUTURE. THESE FISH ARE PROTECTED SO THAT WE HAVE WILD SALMON IN OUR FUTURE. THEY HAVE TO MAKE IT TO THEIR SPAWNING POINT OR THEY DON’T LAY THEIR EGGS.

Get ready, this is a really important weekend. If you forget, remember, I reminded you.
Mother’s Day is this coming Sunday and I hope everyone is prepared or making sure you will be prepared for this Special occasion.
Grilling Seafood or having a Crawfish Boil are very popular among many Mother’s on their special day.
Trust me, they are looking forward to this weekend and all they want is to be with all their love ones. 
It makes me smile when I hear so many Mother’s ordering what they want for their special day.(Especially CRAWFISH)
We’ll sell thousands of pounds of Crawfish this weekend and we’ll sell a lot of  seafood for the grill also. With the weather looking really nice, it’s very important that you reserve your order so you are protected on your order.
This is a really big week for Crawfish. Get prepared and make sure you don’t wait until the last minute to order.
**We will have Florida Stone Crab Claws arriving this Thursday for Mother’s Day weekend. Season will end on May 15th.
This is a special treat!!
Season will reopen on Oct. 15th.
This is your last chance of getting any Fresh Stone Crab Claws until October.
*Wild Copper River Sockeye Salmon Season opens on May 18th. Our gov’t has set a 12 hour opener for the first day of the opening. We can expect
to have our first shipment from Alaska to arrive within two days of the first opening. So that means we will probably get our first shipment on Saturday, hopefully. Last year no fish were caught on opening day. So we were delayed a couple days in receiving the first shipment.
Please keep up with us as I will do my best to keep everyone updated to the last minute. You will know when I go to the airport to pick up the first shipment.
We’ll know cost and availability as soon as the fisherman tell us, usually on the day of the opening. We’re also hoping for some Kings this year. Last year there were only a few caught during the whole season and the cost was out of site.

Hi Everyone!
Well, so much for the 100% chance of rain and thunderstorms we were suppose to have this past Saturday.
It’s too bad the meteorologists just couldn’t get it right this weekend because Saturday turned out to be a nice day for everyone to enjoy. The storms didn’t arrive until early Saturday evening and many customers decided to cancel their orders on Friday because of the forecast for the weekend.
Severe weather did come later in the evening and became really dangerous in areas outside of the metroplex.
The storms that came through the metroplex late on Saturday evening left us very wet but ended up destroying other areas east of us. People in the Canton area were hit with tornadoes and flooding and further east and in south Louisiana flooding took over some cities and the Crawfish farms.
With all this happening, the Crawfish farms were hit really hard. All the farms are flooded and we are hoping that the fisherman can find the Crawfish traps so they can get ready for this upcoming weekend.
This coming weekend just happens to be the largest Crawfish Festival weekend of the season. This festival is being held in Breaux Bridge, Louisiana.(Crawfish Capital of the World) Thousands and thousands and thousands of pounds of Crawfish will be consumed by so many people.
Many people don’t keep up with this type of information and many people don’t realize how mother nature can change the direction of a business. With this type of damaging weather and with the unbelievable demand there is for Crawfish, it’s actually amazing the season stays open as long as it does.
Here’s another one, Shreveport is having their Crawfish festival on the weekend of May 25-28. Right before Memorial weekend.
With so many Crawfish festivals happening in Louisiana during the month of May and with the season already having a difficult time keeping up with demand for Crawfish, supplies are starting to be a big problem.
Remember, Memorial Weekend is right around the corner. Get your orders reserved now so you won’t be on the end of the list. Those who wait until the day before a major weekend to order may find out that you waited a little too long.
So, when I mention over and over again how important it is to call in and reserve your order, I am not trying to push you for an order. I just don’t want you to be left out if there is a shortage on anything you need.
Now, with all this being brought up, our Crawfish Suppliers are telling us that #1Select Crawfish are basically no longer to be found in any kind of quantities. So, I am telling everyone that #1 Selects are on a first come first serve basis. If you have an order already on our books for Selects, I will do my very best to secure these for you but since there is a shortage on the big crawfish and if I cannot get enough of the big ones, I will automatically change your order to a washed and graded crawfish. This grade includes some #1 Selects but also has a mixture of other medium to large sizes.
Also, since I am the largest Crawfish supplier in the metroplex, I have four major suppliers that take care of me. They have all told me the same story on the issues at the farms. So all I can do is just cross my fingers and hope that these farmers can come through for everyone this weekend.

Hi Everyone!
Thanks everyone for your patience and understanding this past Saturday.
What a crazy weekend we had this past weekend. You never know when a possible disaster can happen but when you wake up to a call from your suppliers at 4:45 A.M on Saturday morning telling you that the farmers were not able to catch enough crawfish for my orders and our back up supplier had their truck flip over, I got into the survival mode and did everything I could to come through with all the crawfish that was needed to meet my orders. By putting together three really good suppliers, they worked together and made it happen.
What initially started the problem was the amount of crawfish that was consumed on Easter Weekend. The Crawfish suppliers have told me that this was the biggest weekend that they have experienced in a long time and it caused a shortage for this past weekend. Especially for big crawfish.
We came through, not everyone got the size crawfish they ordered but we got everyone the best crawfish that we could get from our suppliers. Thanks again everyone, I really appreciate your support!!
 
This week, we are playing it safe by limiting the #1 Select Crawfish. The farmers are telling us to scale back on #1 Select orders so they can make the Washed and Graded real nice.
This week, we will be offering the Graded and Washed and Large Mixed Field runs and a limited amount of Selects.
So get ready for another great weekend and make it a weekend to bring together your friends and family.
It’s amazing how Crawfish cookouts bring so many people together.

It was great seeing everyone this past weekend. It was another busy one for us at the store. I really appreciate all of you that came by.
We sold out of thousands of pounds of Crawfish on Saturday and Sunday and we also had many
customers purchase our freshly cooked crawfish on Saturday and we ended up selling out after doing three large batches.
I hope that everyone keeps up with the weather so that your plans don’t get ruined by bad weather.
I try to tell everyone to keep up with the weather especially when you order something that is perishable.
If you are having Crawfish on a weekend and the weather doesn’t look so great, you can call us up until 5:00 P.M. on Friday to change your order. That is one reason I continue to emphasize how important it is to order and reserve as early as possible so you plenty of time to keep up with the weather and also make any changes that you need to make before it’s too late.
Last weekend we had a lot of cancellations on Friday for Saturday when the weather was suppose to be real bad, it turned out to be a really nice day and if they were to keep up with the forecast, they would have seen what I had been watching all week. Some customers didn’t know that it was going to rain on Sunday.
So, try to keep up with the weather so you’ll know in time to throw your party or to delay it.
Also, please understand that when we place an order that is reserved by our customer, the customer is responsible for the order to be picked up. Please do not try to cancel if we have received your order. We have all the crawfish we need.
