IT’S GETS PRETTY CRAZY AROUND HERE STARTING SUPER BOWL WEEKEND BECAUSE THIS IS WHEN WE USUALLY KICK OFF THE START OF OUR “CRAWFISH SEASON”. AND SOON AFTER THAT, WE HAVE MARDI GRAS AND VALENTINE’S DAY.
 
LET’S ALL CROSS OUR FINGERS FOR A GREAT CRAWFISH SEASON!!
BASED ON THE NEXT 10 DAY WEATHER REPORT, IT LOOKS AS IF WE SHOULD BE HAVING SOME PRETTY DECENT WEATHER FOR THE NEXT COUPLE OF WEEKS. LET’S JUST HOPE THAT IT STAYS THIS WAY SO EVERYONE CAN ENJOY BEING OUTSIDE AND ALSO ENJOYING BEING WITH FAMILY AND FRIENDS AROUND THE GRILL. THIS COLD SNAP WE RECENTLY EXPERIENCED REALLY TOOK A TOLL ON THE EARLY START OF THE CRAWFISH SEASON BECAUSE IT WAS SNOWING AT THE FARMS IN LOUISIANA AND FREEZING THE WATER IN THE PONDS WHERE THE CRAWFISH ARE CAUGHT. THE WATER TEMPERATURES AT THE CRAWFISH FARMS NEED TO BE AROUND 52 DEGREES FOR THE CRAWFISH TO START COMING UP TO FEED. UNTIL THAT HAPPENS, CRAWFISH WILL NOT GET LARGE VERY FAST.
PLEASE RESERVE YOUR CRAWFISH ORDER AS SOON AS POSSIBLE SO YOU ARE ON THE BOOKS. WE HAVE NO IDEA HOW THE CATCH WILL BE DURING SUPER BOWL WEEK. PROTECT YOUR ORDER BY RESERVING YOUR ORDER.

**THE REASON THAT ALL SHRIMP THAT IS PEELED AND DEVEINED IS FARM RAISED AND IMPORTED IS BECAUSE THE DEMAND FOR THIS TYPE OF SHRIMP IS SO HIGHLY POPULAR AND THAT THERE ISN’T ENOUGH WILD SHRIMP IN OUR OCEAN TO MEET THE INTERNATIONAL DEMAND.
SO, FARM RAISING HAD TO SUPPLEMENT THE INCREASE IN CONSUMPTION. IF WE WERE TO USE ALL THE SHRIMP IN OUR OCEAN TO MEET THIS REQUIREMENT, WE WOULD DEPLETE THE WILD POPULATION.

I hope everyone is enjoying the Fall weather we’re having lately. It’s cool outside and perfect for family gatherings and also ideal for grilling. We have all the football games going on and baseball playoffs that are happening at the same time so this brings friends and family together.

So, if you are sitting around and it’s getting that time to start thinking about dinner plans, drop things and come on down to our store and let’s come up with a good combination to satisfy everyone taste buds.

We have so many wonderful varieties of fish and shellfish that are perfect for the grill. We also keep in stock different types of sausages that  are also perfect for the grill.

Have any of you ever tried Soft Shell Crabs on the grill? What a treat!!

There are so many different ways to cook seafood on the grill, I just wish more people would step out and try something different. I know that once they do try something different, there’s no returning to the old way. It’s a whole different experience.

I recently stood in my lobby of my seafood store and spent some time reminiscing with a customer about how he and his wife had never experienced seafood before coming into my store 23 years ago. FIRST, you tell us which fish and shellfish you would like on your Kabob. Whatever the combination is, you only pay for the cost of what we make your Kabobs with. You can come in to tell us what you want on your Kabobs or you can call your request in and we can have it ready for you to pick up when you come by.****

When it comes to fresh vs frozen, I try to explain to my customers that I personally do all the buying for Capt’n Dave’s and I search out to find the highest quality seafood available for our customers and also at the best price that I can find. You have to ask yourself sometimes, how fresh is the fish that I am about to buy and go home and cook. I analyze and question every supplier when I order. A lot of my suppliers don’t really Iike it when I ask so many questions but they all seem to understand that I want the freshest, highest quality, and the best price I can get for my customers. I also want to know when the fish was caught and how long it’s been out of the water and to make sure that they don’t thaw any frozen product and offer it to me as fresh. Whatever comes in frozen, I want to be able to thaw it out myself or I want to keep it frozen until it is sold. That way, I have control of knowing what quality it is before it goes home with my customer.

On a daily basis, we receive multiple shipments from out suppliers. When there is a special fish that’s hard to find, I will purchase plenty so when it’s not available fresh, I have it for you frozen. Our fresh fish arrives daily and we vacuum seal all fresh fish that arrives at my store. At the end of each day we look at how much fresh vacuumed sealed fish we have and we’ll freeze some to make sure we always have a backup when the special fish is not available. The rest of it is sold fresh and we only keep enough out fresh for only a couple days. We get our deliveries daily so there is no need to keep large inventories. We’ve been doing this for approximately 27 years and I believe most everyone is enjoying it. 

COPPER RIVER SOCKEYE: Season is finally over.

We have been bringing in fresh Sockeye and vacuum sealing a lot of it and freezing it for our customers and now that the season is over, we have a good backup to keep us going for months. Our suppliers have also done the same thing so we have Sockeye throughout the year until the next season opens in May.

We sure had some beautiful weather over the weekend and I hope everyone was able to enjoy it. There were plenty of High School, College and Pro football games over the weekend and I hope that you got to enjoy your teams play.

The Plano Balloon Festival was also another big event over the weekend. I’m not sure if any Balloons got off the ground due to the wind though. But it’s always fun to go and watch and enjoy all the activities and also the food.

 

As I have mentioned over the past few weeks, this time of year is our slowest time of the year and we appreciate everyone that understands this and we love the support you give us during this time of the season.

We continue to bring in the best seafood you can have on the grill. We have a very large variety of Fresh and frozen seafood available with one of the largest selections of seafood to choose from.

We get our seafood delivered on a daily basis and Sunday is the only day we don’t have a scheduled delivery so we order late on Saturday for anything we may be running low on. We try not to run out of anything on Saturday so we can provide our customers a good variety on Sunday. The games really draw the customers to our store and with the items that work real good for Tailgating or just sitting around watching game are very popular.

I feel that our Cajun Crab Dip outdoes anything we sell during the games as an hor d’oeuvres. Our Cajun Crab Dip is made specially for us on a daily basis right here in the Dallas area. Our Crab Dip is made with real (Snow Crab meat and a small amount of imitation crab)

Our cooked boiled shrimp is also a big hit with everyone. We boil shrimp throughout the day on a daily basis and you can’t go wrong when you take home our Cooked Shrimp or our Crab Dip. Just remember, don’t open the bag before you get home!! Or you might be turning around to come back to the store to pick up more before you get home with the goods.

 

So, if you are thinking about having friends over to watch a game this week(tonight…Cowboys vs Cardinal’s), think about what you might be wanting to snack on during the game or maybe even a meal. ****Making Seafood Kabobs is what we love doing for our customers. Here is our program on us making your Seafood Kabobs: 

First, you tell us which fish and shellfish you would like on your Kabob. Whatever the

combination is, you only pay for the cost of what we make your Kabobs with. You can come in to tell us what you want on your Kabobs or you can call your request in and we can have it ready for you to pick up when you come by.****

Once again and again, our biggest seller over the last few weeks has been our “COBIA and WAHOO and MAHI AND GROUPER.” These two fish are very hard to find and most people have never tried them before. I can tell you that once you have tried either one of these two fish, it won’t be your last. These fish are absolutely delicious. ENJOY IT AND TELL YOUR FRIENDS ABOUT IT. THEY ARE BOTH AN UNBELIEVABLY DELICIOUS FISH!!!  Other really big sellers have been our Tuna, Mahi, Grouper, Halibut and Sea Bass. As always though, our Copper River Sockeye Salmon is always our top seller all year long.

We will have fresh Gulf Flounder, Halibut, Wahoo, Seabass and Mahi and Sea Scallops arriving tomorrow. We almost sold out this weekend!!

Another big seller is our Red Snapper. It’s probably the most familiar fish that everyone knows about. We stock more  Red Snapper than any of our fish. It’s always one of our top sellers.

When it comes to fresh vs frozen, I try to explain to my customers that I personally do all the buying for Capt’n Dave’s and I search out to find the highest quality seafood available for our customers and also at the best price that I can find. You have to ask yourself sometimes, how fresh is the fish that I am about to buy and go home and cook. I analyze and question every supplier when I order. A lot of my suppliers don’t really Iike it when I ask so many questions but they all seem to understand that I want the freshest, highest quality, and the best price I can get for my customers. I also want to know when the fish was caught and how long it’s been out of the water and to make sure that they don’t thaw any frozen product and offer it to me as fresh. Whatever comes in frozen, I want to be able to thaw it out myself or I want to keep it frozen until it is sold. That way, I have control of knowing what quality it is before it goes home with my customer.

On a daily basis, we receive multiple shipments from out suppliers. When there is a special fish that’s hard to find, I will purchase plenty so when it’s not available fresh, I have it for you frozen. Our fresh fish arrives daily and we vacuum seal all fresh fish that arrives at my store. At the end of each day we look at how much fresh vacuumed sealed fish we have and we’ll freeze some to make sure we always have a backup when the special fish is not available. The rest of it is sold fresh and we only keep enough out fresh for only a couple days. We get our deliveries daily so there is no need to keep large inventories. We’ve been doing this for approximately 27 years and I believe most everyone is enjoying it.

One interesting thing about what is available fresh and what is available frozen is that our suppliers know that I am very particular when it comes to quality and I require the highest quality seafood available. Over the past few years with the price of fuel climbing, it has caused many fisherman to stay out longer while hauling in their large catch. The large ships have all the processing equipment on board and they do all the processing while at sea. Many species that are caught, are filleted, vacuumed sealed and frozen and when they return to shore to drop off their catch, they turn right around and go back out again. Some large fishing ships have boats that meet them out on the ocean and transfer their catch so they don’t have to come into shore as often and this actually keeps cost down when fuel is so high.

We have been bringing in fresh Sockeye and vacuum sealing a lot of it and freezing it for our customers and now that the season is over, we have a good backup to keep us going for months. Our suppliers have also done the same thing so we have Sockeye throughout the year until the next season opens in May.

Well, it’s that time of year again when sports takes precedence over most everything and then you have everything else working around sports to make everyone happy. That’s what I see and hear when customers come in to our store. We see a lot of customers preparing for tailgate parties and we see many people looking for something real simple to make because they don’t have time to plan a big outing due to their busy schedules. 
If you are sitting around the house enjoying the games or if you are out at the games, we have basically everything you need to make things much easier than you would think.
We have Boiled shrimp, Cajun Crab Dip and crackers, Smoked Salmon and we even have oysters if you really want something special. A dozen on the half shell while watching a football game? What a treat!!

I hope everyone enjoyed this past weekend, with all the football games and other sports that were happening, we saw a lot of customers preparing for tailgate parties and grilling out at home during the games. We also noticed the downward trend that happens every year around this time. I can almost plan it to the date when sports, after school activities and weather take priority over eating healthy in a lot of situations. It’s been the same for over 23 years at my location. Friday nights are really the hardest for us because so many families go to school games and with their kids so involved in all the activities surrounding their school, it’s hard for families to come home and have a sit down family dinner.

As I mentioned above, I know that this is the time of the year when many of our customers are deep involved with their kids after school activities and I know it makes it hard to stop and have a sit down meal in the evenings due to having to be on the run so much. If we can make it any easier for you, please give us a call and we can go over all the more convenient items we have available that can make your planning a little easier for you.

There’s not a lot happening this time of the year except for SPORTS which will keep many of us occupied in front of the T.V. So, if you plan on watching a lot of College and Pro football games, think about what would be the best thing to serve while entertaining your guest during the games. I always recommend our delicious Cajun Crab Dip.
